Pippa Middleton has described how she coaxed university friends into making sushi whilst watching the rugby in her latest trademark culinary offering. By Victoria Ward

Her first monthly column for Waitrose Kitchen magazine reveals that she is often exhausted by the end of the working week and suffers from “pre-Monday melancholy” as the weekends draw to a close. Although it may not be the most traditional snack with which to watch the rugby, Miss Middleton gives readers basic instructions about how to cook rice and roll sushi.

The feature, entitled Pippa’s Friday Night Feasts, includes the 29-year-old’s thoughts on how to start the weekend with a “relaxed, Asian-themed night in with friends”.

“The first time I made sushi was at Edinburgh University,” she writes.

“I convinced my flatmates to help, promising we’d prepare it in front of the rugby on TV that afternoon.

“The trickiest part was cooking the rice but even that, once we got a feel for the right stickiness, was easy, while the rolling just required patience.

“Keep the layer of rice fairly thin and be generous with the filling. If you don’t have a bamboo rolling mat, just use cling film.

In her first magazine piece, entitled Pippa’s Friday Night Feasts, the Duchess of Cambridge’s younger sister pens her thoughts on how to start the weekend with a “relaxed, Asian-themed night in with friends”.

Miss Middleton’s advice and ideas are spread over five pages which picture her in a blossom print dress.

The 29-year-old, whose guide to entertaining Celebrate was widely criticised for offering simplistic advice, begins her column by telling readers that Friday is the “night to feast”.

She writes: “Friday night is the perfect time to cook.

“Regardless of how tired I might be, the moment Friday lunchtime arrives I get that contagious pre-weekend excitement.

“Even if I’m feeling exhausted and don’t feel like doing anything but watching telly, I can put off being tired till Saturday.

“Fridays, of course, hold the promise of the weekend but also, being far enough away from pre-Monday melancholy, feel freer.
